On Thursday at Fire Food and Drink, I did not work as a
food runner but was up with Katie whose the hostess. They do reservation on the
phone and through Open Table, but prefer if you call in. People make the most
bizarre requests when making their reservations, especially via Open Table.
Some people are very particular about where they want to sit and special
requests they have. Another thing that shows up on their reservations are notes
that people from the restaurant have wrote about them. While it was a slow
night we were reading through the notes and saw some that said how a certain
couple is very nice and to treat them well, and others said that they refuse to
have certain waiters. I found out James Franco’s grandmother goes to fire and
that the Cleveland orchestra comes in later in the night. At the restaurant it
is important that the staff know the names of the people that come in. the
staff knows many of the people that come in and what they like and are always
trying o accommodate to people’s needs. Working up with the hostess is more
about knowing the people and welcoming them.
