Today was the second day that I was a food runner. I am really starting to get the hang of how to do everything. The night was a little busier than Wednesday, but it still wasn't too bad. Turan, the main food runner, still shows me a lot of what to do. He says that everyday, he takes an hour just to prepare his station. First, he takes all of the clean plates from the kitchen and puts it under his station. Next, he makes sure that all of the to-go bags are set up properly. Then, he gets a little tub full of ice and puts it right under the salad station. One thing that makes Fire very unique is the sides for the caesar salad. To go with the salad, there are eggs, salmon, bacon, capers, and balsamic onion. Food running is a lot harder than I originally thought it would be. The most important thing that I have learned so far is that it is so important to always be prepared. If you aren't prepared with your station, and setting up the salad sides for example, it can really set the whole night behind.Thursday ran very smoothly. There were very little mistakes. I have all of the table numbers down in my head and basically have every item on the menu memorized. This is actually a really interesting senior project.
