Fire Food and Drink: Day 3

Friday, May 16

Today was the first busy night of the week at Fire. Tonight, there were about 150 customers and we had to move a lot faster than we had any of the other nights. It was actually a little intimidating being under so much pressure from the chefs. Everyone was a little stressed, especially the sous chefs. Most of the night, the sous chef fights with the salad chef on the timing of everything. The employee that makes the salad is a 19 year old kid named Stephen. He is the only one in fire who is decently close to my age so he is pretty easy to talk to. By this time, I really can find my way around the restaurant. Today, there was a new food runner and his name is Aaron. His brother Evan works as the bartender and he is very close with Turan. Even thought the night is going to be incredibly busy, Aaron and Turan still joke around. They always say that they hate when people around them act stressed when it is unnecessary. Tonight was the first night that I saw a customer get a little upset. Because the line of salads ended up slacking a little, the entrees did as well. One customer ordered a burger and claimed that it had been sitting under the lamp for a half an hour, when it had really been sitting there for a few minutes. Just like it always is in the food business: the customer is always right.
